I beloved making this easy pad thai recipe for my family and putting out bowls of cilantro, peanuts, dark-green onions, and limes for their own DIY topping bar! We love to make meals similar this once a week for our weeknight dinner rotation!

Over the holidays I was lucky plenty to take a few family members in boondocks! I come from a very pocket-sized family on both my parent's sides so we never had a ton of people going in and out of our house. Since everyone was in town, I knew I wanted to have a little dinner at the house! My house is teeny tiny simply I always seem to make information technology piece of work! An like shooting fish in a barrel, low carb version of chicken pad thai! This healthy pad thai recipe is fabricated with zoodles instead of brown rice noodles.


For the pad thai:

three4 Medium Zucchinis, spiralized

four Tablespoons of olive oil

one Xanthous bong pepper, thinly sliced

1 Cherry bong pepper, thinly sliced

1/2 Yellowish onion, thinly sliced

2 Carrots, shredded or thinly sliced

i Cup of bean sprouts

2 Whole eggs, browbeaten

1 Lb of chicken thighs or breasts

1 Teaspoon of kosher salt

1/ii Teaspoon of blackness pepper

For the sauce:

three Tablespoons of honey or agave nectar

4 Tablespoons of fish sauce

iii Tablespoons of red chili sauce

3 Garlic cloves, minced

1 Thumb of ginger, grated

2 Tablespoons of soy sauce

1 Teaspoon of rice wine vinegar

Squirt of sriracha if you similar it spicy!


  1. Heat a grill pan or heavy bottom skillet on medium heat with 2 tbs. of olive oil. Flavour chicken with salt and pepper and cook for iv-5 mins on each side or until internal temp reaches 165. Let rest for 5 mins and thinly piece, gear up aside.
  2. In a medium basin whisk together all of the sauce ingredients and gear up bated.
  3. Heat 2 tbs of olive oil in a big pan on medium heat. Add in thinly sliced onions, bell peppers, and carrots and cook for five-six minutes or until onions are translucent.
  4. Push veggies to i side of the pan and add in beaten eggs. Begin to melt eggs, moving them often until they are scrambled. Stir veggies and scrambled egg together and add in sauce mixture. Melt for 1-2 minutes or until sauce has thickened a little.
  5. Add in zoodles and bean sprouts and coat well with sauce and make sure vegetables are well incorporated. Heat for 2-three minute or until zoodles are tender but not mushy.
  6. Top with grilled chicken slices, cilantro, green onions, crushed peanuts and black sesame seeds.

For toppings:

Put out pocket-size bowls filled with chopped cilantro, green onions, crushed peanuts, blackness sesame seeds and limes! OR for a weeknight dinner but sprinkle toppings over bowls evenly.
